BEETROOT LIKE NO OTHER

I love beetroot. Do you?
And yet, when it lands in your hands do you know what to do with them?
I instantly think of making Borscht (Barszcz). You know what they say – You can take Polak out of Polska but can’t take Polska out of Polak. True. In my case, very true.
And just to make it even more fun, there is about four or five different types of Barszcz in Poland and across Eastern Europe. And about as many recipes for each one of them as families living in the area. I’m not complaining about it, it only means you can never get bored of eating them, right!?

And in the meantime, if you happen to have a beetroot in your fridge and have no clue what to do with it… here’s a simple and delicious smoothie recipe i made this morning. We all know beets are full of vitamins and minerals, low in fat and packed with powerful antioxidants. So don’t let it sit there for too long!
1 beetroot (chopped)
1/2 banana
1/2 lemon (peeled)
handful of baby spinach
1/4 avocado
1 tbs linseed
50ml kefir or natural yoghurt
add water and blend
